Cootamundra Kid Product
Kid goat meat is similar to lamb or veal but has a subtly different flavour, offering a tender, tasty and interesting alternative for the fine dining menu.
Cootamundra Kid supplies kid goat meat, which includes:
- Milk fed Kid (Capretto) — up to 4 months in age with a typical dressed carcase weight of between 7 – 12 kgs; and
- Grass fed Kid (Chevon) — up to 12 months in age, with a typical dressed carcase weight between 10 - 15 kgs.
We offer a range of gourmet meat cuts which are trimmed and vacuum packed to ensure long lasting freshness. Our vacuum packed product lasts for 3-4 weeks in the fridge.
Retail Cuts
Mr Gordon (Neutral Bay) retails Cootamundra Kid and offers cuts similar to that of lamb.
In addition upon request, Mr Gordon can provide cuts butchered to your specification.
For each of the retail cuts available we have developed and selected recipes (go to recipes).
Storing Cootamundra Kid
- Cootamundra Kid that is vacum packed can normally be stored for 3-4 weeks in the fridge before being frozen. If you are intending to keep the meat for this length of time we recommend that you check that your cut of meat is properly sealed and that no air pockets are apparent.
- Plastic wrapped meat can be frozen at 0 / -2º or lower if it is to be kept for more than 3-4 days. Kid meat that is properly wrapped and promptly frozen can be kept for 6 to 9 months.
